Candyland Rainbow Cake Serves 16, Prep and Cook: 2 hours 2 x 440g packets golden buttercake mix Liquid pink, blue and yellow food colouring Electric orange food colouring gel 300g packet marshmallow twists Edible rainbow sprinkles, assorted lollipops, lollipop cake toppers, Love Notes candy and love heart lollies, to decorate FROSTING 250g unsalted butter, chopped, at room temperature 1½ cups icing sugar mixture 1 tblsp milk 1 Grease two x 20cm round cake pans. Line bases and sides with baking paper, extending paper 2cm above pan edges. 2 Prepare cake mixes, one at a time, according to packet directions, reserving icing mix sachets. 3 Divide cake mixture between four bowls. Fresh Mango Tart Serves 8-10, Prep and Cook: 45 mins 250g packet Granita biscuits ¹/³ cup desiccated coconut 1½ tsps ground ginger 100g unsalted butter, melted Sliced fresh mango, to decorate FILLING 3 tsps powdered gelatine 2¾ cups fresh mango puree ½ cup caster sugar 2 tblsps lime juice 300ml thickened cream 1 Grease a 25cm round x 3.5cm deep, loose-base flan tin. 2 Process biscuits, coconut and ginger in a food processor until finely crushed.
