Gluten-Free Christmas Cake

500g dried mixed fruit 1 cup finely chopped dried dates (150g) 1 Granny Smith apple (175g), peeled, coarsely grated 2 tsps finely grated orange rind 2 tblsps orange juice 2 tblsps apricot jam ½ cup brandy, plus 2 tblsps extra, for brushing 200g unsalted butter, chopped, at room temperature ¾ cup firmly packed brown sugar 3 eggs 1 cup gluten-free plain flour 1 tsp mixed spice ½ tsp bicarbonate of soda 1¼ cups almond meal (140g) Blanched almonds, to decorate 1 Combine fruit, dates, apple, rind, juice, jam and ½ cup brandy in a large glass bowl.
