Prawn, Chorizo and Olive Spaghetti
Serves 4, Prep and Cook: 25 mins
375g spaghetti 2 chorizo, chopped 500g raw peeled prawns 2 cloves garlic, crushed 2 tsps dried oregano leaves 250g punnet cherry tomatoes 2 tblsps tomato paste 180g tub marinated green olive halves, drained ¹/ ³ cup chopped fresh parsley Lemon wedges, to serve 1 Cook pasta in a large saucepan of boiling, salted water until tender. Drain, reserving 1 cup of the cooking liquid.
2 Meanwhile, heat a large, deep, non-stick frying pan over a medium to high heat. Add chorizo. Cook, stirring for 1 minute. Add prawns, garlic and oregano. Cook, stirring for a further 2 minutes, or until prawns have changed in colour.
