Tuscan Spaghetti Bolognese

375g spaghetti
2 tblsps olive oil
1 large onion, finely chopped
1 large carrot, peeled,
finely chopped
2 stalks celery, finely chopped
2 cloves garlic, crushed
500g packet pork and
veal mince
1 tblsp Tuscan seasoning
680g jar tomato, basil and
garlic pasta sauce
Salt and pepper, to taste
Finely grated parmesan,
to serve
1 Cook pasta in a large saucepan of boiling, salted water until tender. Drain, reserving ½ cup of the cooking liquid. Return pasta to pan. Cover to keep warm.
