Crunchy Anzac Biscuits Makes 24, Prep 20 mins, Cook 36 mins 1¼ cups quick oats 1 cup plain flour 1 cup caster sugar ½ cup desiccated coconut ½ cup shredded coconut 150g unsalted butter, chopped 2 tblsps golden syrup 1 tsp bicarbonate of soda 2 tblsps boiling water 1 Line three oven trays with baking paper. 2 Combine oats, flour, sugar and both coconuts in a large bowl. Mix well. 3 Melt butter and syrup in a medium saucepan over a low heat. Remove from heat. Dissolve soda in water in a heatproof jug. Stir into butter mixture. 4 Pour butter mixture over oat mixture. Chicken Chow Mein Serves 4, Prep 10 mins, Cook 10 mins 500g chicken mince 3 cloves garlic, crushed 1 tblsp mild curry powder 2 vine-ripened tomatoes, cut into wedges 1 large carrot, shredded 5 cups Chinese cabbage, shredded 4 green spring onions, cut into 3cm lengths, plus extra, to garnish 100g packet original fried noodles SAUCE 3 tsps cornflour ½ cup chicken stock 2 tblsps oyster sauce 2 tblsps kecap manis 1 To make sauce, blend cornflour with stock in a jug. Chilli Pork with Noodles Serves 4, Prep 15 mins, Cook 12 mins 600g pork stir-fry strips ¼ cup cornflour 2 tblsps vegetable oil 6 green spring onions, thinly sliced, white bases and green tops separated 1 carrot, peeled, shredded 1 red capsicum, cut into thin strips 400g snow peas, trimmed 1/3 cup sweet chilli sauce ¼ cup light soy sauce 1 tblsp rice wine vinegar 200g dried egg noodles 1 Toss pork with cornflour. 2 Heat half the oil in a large, non-stick frying pan over a high heat until very hot. Add pork in three batches. Cook for 1 minute, without stirring. Stir-fry for a further 1 to 2 minutes, or until browned and almost cooked. Pineapple and Passionfruit Cheesecake Serves 10, Prep 40 mins ½ x 400g packet digestive biscuits ½ cup desiccated coconut 125g unsalted butter, melted FILLING 2 x 85g packets pineapple-flavoured jelly crystals 1 cup boiling water 1½ cups cold water 250g block cream cheese, at room temperature, chopped 300ml tub thickened cream, whipped 1/3 cup fresh passionfruit pulp 1 Grease a 24cm springform pan (base measuring 22cm). Do not invert base. Line base with baking paper. 2 Process biscuits and coconut in a food processor until finely crushed. Add butter. Process until combined. Press evenly over base of pan.
