mamma emma gnocchi alla carbonara PREP TIME 15 MINS COOKING TIME 10 MINS • SERVES 2 INGREDIENTS 200g guanciale (or bacon) 3 egg yolks 60g Pecorino Romano cheese, grated with extra for serving Black pepper, to taste 100ml water 1 pack mamma emma gnocchi METHOD 1. Cut guanciale, either diced or in strips. 2. In non-stick pan, cook guanciale until golden brown and crispy, then set aside, keeping fat in pan. 3. Along with her husband, Mario, they escaped Italy after WWII and went to Venezuela in search of a better future for their family. There, Mario worked buying and selling housecleaning supplies. When they returned to Italy in the late 1950s, he began buying and selling sweets, pasta, oil and canned foods.
