600g minced beef½ tbsp coconut oil1 onion, chopped1 carrot, chopped½ cup frozen peas (it’s important that they are frozen, as the blanching process lowers the carb count)2 cups beef stock2 tsp Worcestershire sauce1 tbsp tomato paste1 tsp fresh or dried thyme2 tsp fresh or dried parsley¼ tsp xanthan gum500g cauliflower, chopped4 tbsp cream cheese1 tbsp butter1 cup white Cheddar cheese, grated
