Could you tell us about the wrangling it takes to produce a single card from a letterpress? It’s a very hands-on process – just ask my hands! It combines a few skills and personal characteristics. Patience is essential; you’ll be at the press for a long time creating just one small piece. The finished product may be very lovely and elegant but you get pretty grubby printing it, so you can’t be afraid to get inky or greasy. Operating the press is a strength and coordination exercise, but it’s also quite meditative because it requires your complete attention. BROCCOLINI WITH PANCETTA & FETA SERVES 10 (as a side) PREPARATION TIME 15 minutes COOKING TIME 10 minutes 200g pancetta slices 3 bunches broccolini, trimmed, halved 150g feta, crumbled 2 tbsp fresh lemon juice 1.
