The original stone garage built in the 1950s was tucked away at the far end of the property and used for storage. Although basic, it was typical of the area and had the potential to become a guest cottage. To support the new steel roof, a steel tubing frame was erected inside the stone walls. Each post has its own foundation so that no weight is placed on the walls. A Chromadek corrugated steel roof was erected over the steel frame. Steel windows from a now-closed restaurant were used to enclose the bathroom space. Glass was fitted in the pitch of the roof to bring in light. Steak with white wine sauce Under R160 • Serves 4 Preparation: 35 minutes • Cooking time: 30 minutes • 2 large rump steaks • 15–30ml olive oil • 30ml butter • 1 large onion, chopped • 2 celery stalks, chopped • 3 garlic cloves, chopped • 1 bay leaf • 5ml dried chilli flakes • 15ml tomato paste • 250ml white wine • 200ml meat stock • a sprinkling of parsley • potato chips and Portuguese rolls, to serve 1 Trim any excess fat offthe steaks and chop the fat into small pieces.
