2 medium carrots, coarsely grated 1 medium potato, coarsely grated ½ small onion, coarsely grated 2 eggs, lightly beaten ½ cup finely grated Parmesan 1 tbsp cornflour 1 tbsp finely chopped thyme leaves 1 clove garlic, crushed olive oil in a spray bottle to serve: sea salt flakes and sour cream METHOD
1 Preheat a 7.3L capacity air fryer to 180°C for 3 minutes.
2 Combine the carrot, potato, onion, egg, Parmesan, cornflour, thyme and garlic in a large bowl; mix well, then season. Shape the carrot mixture into eight 1cm-thick round rosti, pressing each one firmly between your hands to compact them. Spray all over with olive oil.
