Lentil curry
Under R65 • Serves 4 • Preparation time: 20 minutes Cooking time: 35 minutes
• 15ml olive oil• 1 knob fresh ginger• 1 clove garlic, chopped• 1 onion, finely chopped• 2 leeks, white parts chopped• 3 medium carrots, cut into small cubes• 1 red chilli, finely chopped• 25ml curry powder• 2 medium potatoes, peeled and diced• 300ml red lentils, rinsed• 1 litre chicken stock, preferably homemade 1 Heat the olive oil and sauté the ginger, garlic, onion, leek and carrot slowly until fragrant. Add the chilli and curry, and cook for another minute.
2 Add the remaining ingredients and bring to the boil, then simmer over low heat for about 25 minutes until the potatoes and lentils are tender. Serve with rotis, yoghurt and a sprinkling of fresh coriander.
