INGREDIENTS
• 200g/7oz mangetout, halved lengthways• 1 broccoli head, florets thinly sliced• ½ red onion, peeled and thinly sliced• 6 medjool dates, stoned and sliced• 100g/4oz pecans, roughly chopped
For the dressing
• 2 limes, zest and juice (you need 50ml/2fl oz juice)• 50ml/2fl oz olive oil• 2.5cm/1in piece of fresh ginger, finely grated• 1 tsp sea salt flakes, plus extra as needed• 1 red chilli, thinly sliced
