SEARED SALMON ON POTATO, CAPER, SHALLOT AND TARRAGON SALAD

INGREDIENTS
• 1 head of broccoli, trimmed and broken into florets• 1 bunch of asparagus, woody ends removed• 50ml/2fl oz extra virgin olive oil, plus extra for drizzling• Salt and freshly ground black pepper• 4 medium smooth potatoes, such as Désirée, peeled and cut into 5cm/2in chunks• 1 shallot, peeled and finely diced• 50g/2oz capers, drained and roughly chopped• 1 small handful fresh tarragon, leaves only, roughly chopped• 25ml/1fl oz balsamic vinegar• 4 fresh salmon fillets (about 175g/6oz each) 1 .
