Med-style tray bake with mozzarella

4 large fennel bulbs, trimmed and cut into quarters lengthways300g jar pitted black olives, drained and halved3 whole cloves garlic, peeled2 large onions, cut into1cm thick wedgesPunnet cherry tomatoes10 sprigs fresh thyme4 tablespoons olive oil250g ciabatta, torn125g mozzarella, torn
1 Heat oven to 220°C/200°C fan. Bring a large pan of water to the boil and add fennel bulbs. Cook for 5 minutes until just tender when pierced with a fork. Drain well.
2 In a large, deep roasting dish, place the fennel, olives, garlic, onions, cherry tomatoes and thyme. Season with pepper, then drizzle over oil and toss together.
