CHICKEN KOFTES Makes 10 Ingredients 1 slice bread 500g chicken mince ½ onion, chopped 30g Italian parsley, chopped 20g coriander, chopped 1 egg 1 chilli, chopped ½ tsp paprika ½ tsp cumin salt and freshly ground black pepper 1–2 tbsp canola oil for frying Method 1. Soak the bread in a little water and then break it up into a bowl with the rest of the ingredients, except for the canola oil. 2. Season the mixture with salt and pepper and combine all ingredients. 3. In a non-stick frying pan, heat up 1-2 tbsp oil. Add a heaped tablespoon of the mixture into the frying pan.
