SHAKSHUKA (SPICY MOROCCAN EGGS) Serves 4 Ingredients  ¼ cup olive oil 1 red pepper, chopped 1 onion, chopped 2 cloves garlic, crushed 4 courgettes, chopped 1 tbsp harissa paste 1 tsp paprika ½ tsp cayenne pepper 2 cans chopped tomatoes Pinch of sugar 2 tbsp chopped fresh parsley 6-8 eggs Toasted pita bread, to serve Method  1. Preheat the oven to 180°C. Heat the oil in a pan, and fry the pepper, onion and garlic until tender and golden brown. 2. Add the courgettes and fry for a few minutes.
