SPICED MAC ’N’ CHEESE TOTS
Ingredients
100g macaroni
2 tbsp extra virgin olive oil
1 medium onion, roughly chopped
2 cloves of garlic, finely chopped
10g celery, finely chopped
1 tsp ground cumin
1 tsp crushed coriander seeds
50g butter
¼ cup flour
1l milk
1 tbsp chicken stock powder
1 cup white cheddar, grated
¼ cup parsley, finely chopped flour for dusting
100g breadcrumbs
3 eggs, beaten vegetable oil, for frying
