Quinoa salad with hazelnuts, apples and dried cranberries

Ingredients:
1 cup quinoa
1 ½ cups water
1 tbsp of olive oil
1 small onion, finely diced
2 stalks of celery, finely diced
fine sea salt
freshly ground black pepper
1 bunch parsley, thoroughly rinsed and chopped
½ cup dried cranberries, chopped
1 bunch (about 5 to 6) spring onions, chopped (green parts only)
1 apple of your choice, cored and diced
1 cup hazelnuts*, toasted, de-skinned and chopped
1 large lemon, juiced
olive oil, to drizzle
