Beetroot Cured Salmon My mum makes cured salmon every Christmas. For me it is the culinary highlight, so simple to make and delicious. I have cured this salmon with grated beetroot for some festive colour. Makes 50 Prepare 3 days 1 tbsp black peppercorns, coarsely crushed 1 cup coarse Himalayan salt ½ cup coconut sugar 1kg side of salmon, skin on 2 cups grated beetroot 1 bunch dill, roughly chopped, plus extra to serve 1 tbsp finely grated ginger ½ tbsp finely grated orange rind mascarpone, to serve Mix the pepper, salt and sugar together in a bowl. A couple of summers ago my eldest daughter came home from kindergarten with three tiny sunflower seedlings. She eagerly raced to grab a trowel and found a sunny spot to plant them around the side of the house. I was amazed at her commitment to those sunflowers; she would water them everyday and as they got taller she decided they needed to be staked and tied carefully with some old stockings to keep them from falling over. But after the birth of her daughters, her sensitivity to the plight of more vulnerable children began to grow. “Some children whose families are very poor are vulnerable to trafficking or even just being used as labour units,” she says. T his technique is a great way to coordinate mismatched pots without making them look too samey-samey. A bit like painting with watercolours, the dip-dye paint effect allows lots of scope for experimentation. Preparing your pots Step 1: Transfer existing soil or plants into buckets or onto a spread out canvas. Water the plants and leave in the shade.
