4 lbs McIntosh apples, peeled, cored and roughly chopped1 cup apple cider½ tsp ground cinnamonKosher salt
1. In medium Dutch oven, combine apples, apple cider, cinnamon and ½ tsp salt and simmer, covered, stirring occasionally, until apples start to break down, 15 to 20 min.
2. Uncover, reduce heat and gently simmer, stirring occasionally, until apples are completely softened, 35 to 45 min. more depending on crispness (stir more frequently toward end of cooking to prevent sticking). Let cool to room temp, then refrigerate in airtight container for up to 1 week.
