CHICKEN LAKSA
SERVES 2, PREP 15 MINS, COOK 6 MINS
• ½ pack x 200g dried rice noodles
• 1/3 cup laksa paste
• 250g chicken breast fillets, thinly sliced
• 2 cups chicken stock
• 270ml canned coconut milk
• 1 tbsp fish sauce
• 1 tbsp lime juice
• Bean sprouts, sliced red chilli, cucumber matchsticks and coriander leaves, to garnish
1 Cook noodles according to packet directions. Drain. Cover to keep warm.
2 Meanwhile, heat an oiled, large saucepan over a medium heat. Add paste. Cook, stirring, for 1 minute, or until fragrant.
3 Add chicken. Cook, stirring, for 2 minutes. Add stock and coconut milk. Bring to boil. Reduce heat to medium. Gently boil, uncovered, for about 2 to 3 minutes, or until chicken is cooked.…
