TURKEY WITH SAGE BUTTER AND ROASTED GARLIC GRAVY

2½ sticks unsalted butter, softened1 cup fresh sage leaves, roughly chopped, stems reserved1 teaspoon finely grated lemon zest, plus ½ lemonKosher salt1 12- to 14-pound turkey, thawed if frozen (giblets removed, neck reserved)1 large onion, roughly chopped2 carrots, roughly chopped2 stalks celery, roughly chopped2 tablespoons plus 2 teaspoons vegetable oilFreshly ground pepper2 heads garlic, 1 halved crosswise,1 trimmed to expose the cloves8 cups low-sodium chicken broth4 thyme sprigs2 bay leaves (preferably fresh)½ cup all-purpose flour
1. Remove all but the lowest oven rack and preheat to 325˚. Combine 2 sticks butter, the sage, lemon zest and ½ teaspoon salt in a food processor and process until smooth; set aside.…
