3 tablespoons vegetable oil1 pound turkey or chicken wings, plus the neck from your turkey if available, roughly chopped2 stalks celery, chopped1 onion, chopped1 carrot, chopped6 sprigs thyme4 fresh bay leaves8 cups homemade turkey stock (below) or good-quality store-bought turkey or chicken stock½ ounce dried mushrooms, such as shiitakes, porcini or a mix (optional)4 tablespoons unsalted butter, softened¼ cup all-purpose flourKosher salt and freshly ground pepper
