40g fine sea salt 1.2kg Chinese cabbage, cut into 5cm² pieces 70g spring onions (about 1 large bunch), cut into 5cm lengths 45g ginger, finely grated 10 garlic cloves, crushed 30g mild Korean chilli powder, or to taste (available from Korean and other Asian grocers) 1½ tsp caster sugar METHOD  STIR 30g salt and 2 litres of water in a large bowl until salt dissolves.
