WILD RICE
RICE SALAD
Wild rice takes a little longer to cook – read and follow the instructions on the packet carefully.
PREPARATION: 10 MIN COOKING: NONE SERVES 6
DRESSING 45 ml (3 tbsp) olive oil
15 ml (1 tbsp) balsamic vinegar salt and black pepper
3 cloves garlic, crushed
SALAD 375 ml (1½ cups) wild rice, cooked and cooled 1 yellow pepper, diced
½ red onion, finely chopped
2 stalks celery, chopped
½ cucumber, sliced
100 g red cherry tomatoes, quartered handful coriander, chopped
1 DRESSING In a bowl, whisk together the olive oil, vinegar, salt and pepper and garlic. Set aside.
2 SALAD Put the rice, yellow pepper, onion, celery, cucumber, tomatoes and coriander in a bowl. Add the dressing and toss well. Dish up and enjoy.
