COTTAGE CHEESE
MAC AND CHEESE
Cottage cheese gives our mac and cheese extra creaminess.
PREPARATION: 10 MIN COOKING: 1 HR SERVES 6
230 g cottage cheese
500 ml (2 cups) full cream milk
pinch of cayenne pepper
pinch of nutmeg
salt and pepper
300 g Gouda cheese, grated
200 g elbow pasta, uncooked
250 g bacon, chopped
30 g butter Preheat oven to 180 °C.
1 In a blender, purée cottage cheese, milk, cayenne, nutmeg and salt and pepper together. Reserve 60 ml (¼ cup) grated cheese for topping.
2 In a large bowl, combine the remaining grated cheese, milk mixture, uncooked pasta and bacon. Pour into prepared pan, cover tightly with foil and bake for 30 minutes.
