SHEET-PAN BURRATA CAPRESE GNOCCHI

When roasted, gnocchi take on crispy edges while maintaining their pillowy texture. Dollops of burrata (creamier mozzarella) make them irresistible.
4 red, orange, or yellow bell peppers, roughly chopped1 (12-oz.) package fresh gnocchi3 cloves garlic, minced3 tbsp. extra-virgin olive oil, dividedKosher saltFreshly ground black pepperPinch crushed red pepper flakes4 oz. burrata, torn into pieces½ c. fresh basil leaves, torn1½ tbsp. balsamic glaze (¼ c. balsamic vinegar simmered for about 10 minutes)
