3 tbsp. vegetable oil5 corn tortillas, ripped into 2" pieces1 jalapeño, finely chopped2 cloves garlic, crushed and chopped½ small onion, diced 5 large eggsKosher salt½ c. salsa¼ c. cilantro leaves1 avocado, thinly sliced2 radishes, thinly sliced¼ c. cotija cheese, crumbledHot sauce, for serving
1. In a medium nonstick skillet over medium-high heat, heat oil. Add tortillas and cook until crispy on one side, about 5 minutes.
2. Add jalapeño, garlic, and onion. Continue to cook until softened, about 4 minutes. Lower heat to medium-low, then add eggs, season with salt, and stir vigorously until everything is scrambled together, about 1 minute. Add salsa and stir to combine with the egg and tortilla mixture, then cook 1 minute more.
