Fontina is a firm, brine-washed stinker that originates in Italy. The OG, Fontina d’Aosta, is made from raw Valdostana cow’s milk and is named after the beautiful village of Fontinaz, high in the Italian Alps. Unfortunately, this cheese is illegal in Australia. But the good news is that, like anything noteworthy, people have copied it (some better than others) and today, Fontina styles can be found throughout the world.
