Ingredients
2 tbsp oil
1 onion, chopped
1 tsp paprika
1 tsp mixed herbs
1 tin sweetcorn, drained
1 tin chopped tomatoes
½ cup water
½ avocado, diced (optional)
½ cucumber, diced (optional)
Fresh parsley, coriander, or spring onions for garnish
Salt and pepper to taste
Method
Heat the oil and gently fry the onion until soft, then stir in paprika and mixed herbs.
Add the drained sweetcorn, tinned tomatoes, and a splash of water, simmering until the mixture thickens and the flavours meld.
Just before serving, top with diced avocado or cucumber for a refreshing touch.
Scatter fresh parsley, coriander, or spring onions over the top, season to taste, and serve warm or at room temperature with pap, rice, or toasted bread.…
