ROYAL QUAYS MARINA UPGRADED National marina group boatfolk has completed a series of upgrade works at Royal Quays Marina in North Shields. As part of the new developments, existing pontoons were fitted with hammerhead extensions, and the group installed a new pontoon system surrounding the hoist dock, to create a dedicated and safe space for customers to leave their boat to be lifted by the boatfolk team. Additional berths have also been installed, taking the total number at Royal Quays Marina to 400. Garlic & Chilli Grilled Sardines SERVES 2 TIME 15 minutes INGREDIENTS • 10 large sardines, scaled and gutted• 100g butter• 1 red chilli, finely sliced• 4 cloves garlic, crushed• 100g rocket• 250g smoked salmon, sliced• 50g sun-blushed tomatoes• 25g grated parmesan• 100g mixed crab meat• 150ml mayonnaise• Handful of chives, chopped• Olive oil• Butter• Salt and pepper METHOD 1. Place sardines on an oiled and salted baking tray. Lightly oil and salt the fish. 2. Grill sardines on high heat for 4-6 minutes. 3. Remove sardines from the grill. As a child, our family’s most regular seaside spot was Whitby, North Yorkshire – a higgledy-piggledy coastal town, and it’s a place I still love. Often the sky is a crisp blue, sometimes it’s more of a mauve colour with damson clouds with strong, imposing smudges. I realise the north-east is sometimes incorrectly thought of as cold and grey, but I always think of Whitby as shimmering: lustrous, turquoise waves are breaking on the sand, turning it pink and peach by turn.
