The artist and writer Jenny Hunt had heard about hares on Chesil Beach but had never seen one until a few years ago, when she was putting together a book on this Dorset landmark. ‘I went very early one morning to the beach and was trudging along the pebbles when out of the corner of my eye I saw a flash of ginger, and a hare took off across Chesil Beach. It then stood at the top of the pebble bank, silhouetted against the sky. The UK’s first purposely designed and built socially distanced restaurant has been making a splash for guests at the St Moritz Hotel in North Cornwall. Mixing together the aesthetics of private dining rooms and beach clubs, The Anti-Social Club consists of 16 private dining rooms which residents access from individual doors. I have a passion for sailing and hiking along this ancient, rugged coast, marvelling at nature’s design and the poetry of the seasons. I first moved here in 1979 and took up fishing from a rowing boat for the legendary Clovelly herring, lobster and crab, but soon bought my own fishing boat. The coast has always felt like an old friend, so when I first sailed into Clovelly harbour I sensed I had come home. The sea here, the Bristol Channel, yields a bountiful array of marine life, which can include porpoises, seals and dolphins. During lockdown, confined to our homes and missing out on the coastal escapades we crave in springtime, many of us turned to our kitchens as a source of comfort, inspiration and recreation. For a team of three Westcountry women – writers, editors and photographers all working closely with their regional food and drink industry – this was an opportunity to bring a taste of Devon and Cornwall into those inner sanctums, raising much-needed funds for the hospitality industry in the process. Because I like wild food and wild places I love the coast and we’re lucky to live on an island, with so much variety. The coastline gives me a tangible connection to the wilderness. Time is different on the coast and runs according to the tide – you’re bound by nature’s rhythms. When I’m at the beach I often collect shellfish and cook them up in my army mug on a stove – limpets, winkles, mussels, marsh samphire – and feel as though I’m in touch with my ancestors. The west coast of Scotland and the Outer Hebrides are remarkable. The island of North Uist (pictured), in particular, has got wonderfully clean, nutrient-rich water and is very good for seaweed. Salmon and vegetable biryani • 300g combined weight of broccoli and cauliflower, cut into bite-size florets• 2 tbsp sunflower or groundnut oil• 1 large onion, finely sliced• 400g skinless salmon fillet, in 2cm chunks• 4 cloves garlic, crushed• 2 tsp grated ginger• 3 tbsp curry paste• 1 tsp ground turmeric• A handful of sultanas• 500g cooked basmati rice, brown or white• Juice ½ large lemon• 25g toasted flaked coconut or almonds• Flaked sea salt For the yoghurt: • 6 tbsp natural yoghurt• 3 tbsp chopped mint• ¼ cucumber, seeds removed and finely chopped Method (serves 4) 1.
