GUILT-FREE TREAT
SWEET POTATO PONE
(MAKES 12 SQUARES)
STEP 1 Preheat the oven to 180°C/Gas mark 4 and line the base of an 18 x 24cm baking tin with non-stick baking paper.
STEP 2 Mix 250g raw sweet potato (peeled and coarsely grated), 150g demerara sugar, 90g fine cornmeal, 40g desiccated coconut, 3/4tsp ground mixed spice, 1/2tsp ground ginger, 1/2tsp ground cinnamon, 1/2tsp ground black pepper, 1/4tsp ground nutmeg, 1/4tsp ground cloves, pinch of sea salt, 100ml light coconut milk, 25g melted unsalted butter and 1/2tsp vanilla extract, until smooth. Stir in 50g raisins.
STEP 3 Pour the batter into the tin and spread out evenly. Bake for 45mins, until golden.
