SIMPLE SUPPER KALE, SPELT AND CHORIZO BIG SOUP SERVES 4-6 • 2tbsp rapeseed oil • 1 onion, chopped • 2 cooking chorizo sausages, skins removed and crumbled into small pieces • Pinch of chilli flakes, to taste • 4 tomatoes, peeled and chopped • 150g pearled spelt, rinsed and drained • 1.5-litres chicken or vegetable stock • 200g curly kale STEP 1 Heat oil gently, add the onion and fry for 10 mins, until soft.
