LEMONGRASS AND COCONUT RICE WITH EDAMAME SERVES 2
• 150g brown rice• 1 stick lemongrass, roughly sliced• 2 lime leaves• ½ fresh green chilli, seeded• Thumb-sized piece fresh ginger, roughly chopped• 1 shallot, roughly chopped• Handful of fresh coriander, finely chopped, plus extra to garnish• 1tbsp coconut oil• 150ml coconut milk• 200g edamame beans, thawed if frozen• 1 courgette, finely diced• Lime wedges, to serve STEP 1 Put the rice in a pan of cold water and bring to the boil, then part-cook for 15 mins. Drain and set aside.
STEP 2 Blitz the lemongrass, lime leaves, chilli, ginger, shallot, coriander and coconut oil into a coarse paste.
