CHICKEN TIKKA SKEWERS WITH SPINACH PILAU
Serves 4. Cooking time: 35-40 mins, plus marinating
• 150g fat-free natural yoghurt• Grated zest and juice of 1 lemon• 2tbsp tikka curry powder• 2 garlic cloves, crushed• 4cm piece of ginger, finely grated• Salt and ground black pepper• 4 skinless, boneless chicken breasts, sliced into chunks• 1 red pepper, deseeded and sliced• 2 red onions, sliced• 8 cherry tomatoes• 2 courgettes, sliced• 450g dried basmati rice• 4 cardamom pods• 1 cinnamon stick• 1/2 tsp turmeric• 2 carrots, peeled and grated• 175g baby spinach leaves 1. Mix together the yoghurt, lemon zest and juice, curry powder, garlic and ginger. Season, add the chicken and coat evenly. Cover and chill for 1 hour or overnight.
