SERVES 4 • 1 medium pumpkin (or a 1kg piece) peeled, seeded and cut into 1cm pieces (save the peelings)• Good pinch of saffron strands• 1tsp tomato purée• 1ltr hot vegetable stock• 60ml olive oil• 4 shallots, peeled and finely chopped• 250g carnaroli rice• 60g butter• 60g freshly grated Parmesan STEP 1 Put the pumpkin peelings in a pan with the saffron, tomato purée and stock. Simmer for 30 mins, strain and set aside. STEP 2 Heat the oil in a large pan and cook the shallots until soft. Add the rice, stirring it well over a low heat for 1 min.
