INGREDIENTS
4 slices whole-wheat, multigrain, or pumpernickel bread, toasted, if you like½ cup hummus1 ripe avocado, peeled, pitted, and sliced1 large tomato, cored and sliced½ English cucumber (the kind wrapped in plastic), thinly sliced½ small red onion, peeled and very thinly sliced (optional)¼ cup alfalfa sprouts or microgreens (optional)
INSTRUCTIONS
1. Using the dinner knife, spread half of the hummus on each of 2 slices of bread.
2. Add a layer of avocado, then tomato, then cucumber slices. Add the red onion and/or sprouts, if using.
