Meal Deal
1 In a bowl, mix together ¼ finely chopped red onion, a finely chopped red chilli, and a finely chopped beef tomato. Season well, then add 2 finely chopped, ripe avocados and juice of a lime. Mix well.
2 In another bowl, mix 250g cooked brown rice with 1 tin drained, rinsed kidney beans, 1 tin chopped tomatoes and chopped, pickled jalapeno slices.
3 For burritos, beat 6 large eggs with 2tbsp parsley, and season.
4 Heat some oil in a frying pan, add ¼ egg mixture to pan, and cook flat, like a tortilla, for 2-3 min until cooked through. Remove to a plate and make three more.
