Charred chicken thighs with fish sauce, lime & chilli caramel dressing
The caramel dressing makes for a sweet, funky and salty combo.

6 chicken thighs, skin-on, bones removed2 tbsp vegetable oil1 tsp turmeric1 tsp kashmiri chilli powder2 garlic cloves, grated5 tbsp fish sauce5 tbsp golden caster sugar2 red chillies, sliced on an angle1 lemongrass, outer woody layer removed, then finely sliced25g ginger, chopped into matchsticks3 limes, zested and juiced2 spring onions, sliced into thin strips and left in ice water10g mint leaves, picked, and cooked jasmine rice, to serve
