Cauliflower heads, or curds, are actually immature flowers. Most are white or cream, but there are also purple or orange varieties. Plants need lots of space, unless you grow ‘mini’ types. Romanesco types are actually a broccoli that looks like a cauliflower, with spiralling white or green florets. Caulis are a good source of vitamins C, K and B complex, and minerals including potassium, and are low in calories.
HARVESTING
Cut the stem using a sharp knife once the curd is sufficiently large and still firm, and before it develops individual florets.
