Captain Cook routinely carried cabbage on ocean voyages, usually preserved as sauerkraut, to prevent outbreaks of scurvy. His ship’s doctor also used it to dress wounds. Remove outer leaves and core, then boil, steam or stir fry with chilli and ginger. Cabbage contains vitamins B1, C and K, and is rich in fibre and cancer-beating sulforaphane.
HARVESTING
Cabbages can be pickled, though heads kept at 0°C will stay in good condition for weeks.
HOW TO GROW
Put a collar around the base of each seedling after planting to exclude cabbage root fly, then cover with fine mesh to keep out butterflies and hungry pigeons.
