Iced green gazpacho with summer salsa
■ Serves 6-8 as a starter ■ Prep 20 mins plus 4 hrs chilling ■ No cook
1 green or yellow tomato, quartered ½ cucumber, seeded and quartered 1 small onion, quartered 1 jalapeño chilli, deseeded and roughly chopped 2 celery sticks, roughly chopped 2 slices sourdough bread, torn into pieces 1 garlic clove, peeled small bunch of coriander 2 tbsp sherry vinegar 3 tbsp extra virgin olive oil 500ml cold vegetable stock 1 green pepper, deseeded and quartered 1 yellow pepper, deseeded, ½ quartered, ½ diced 100g watercress 10 radishes, sliced, to serve
