Temperature The internal temperature of your turkey should be 65C when ready. You must then leave it to rest for at least 20 mins. Potted crab • Serves 2 • Prep 10 mins plus chilling • Cook 5 mins 100g butter ½ lemon, zested ½ tsp lemon juice generous dash of hot sauce pinch each of ground mace and freshly grated nutmeg ½ tsp cayenne pepper 100g dark crabmeat 100g white crabmeat toast, to serve 1 Melt the butter over a gentle heat, then add the lemon zest and juice, hot sauce, spices, and salt and pepper.
