2 medium plums, chopped (1 cup)1 medium peach, sliced and/or chopped (1 cup)1 medium tomato, sliced and/or chopped (1 cup)1 cup halved pitted fresh (or thawed frozen, drained) cherries2 Tbsp. coarsely chopped fresh parsley1 tsp. lemon zest1 Tbsp. lemon juice1 clove garlic, minced¼ tsp. salt⅛ tsp. black pepper1 Tbsp. extra-virgin olive oil
