WHIPPED FETA
Whir together feta, a bit of cream cheese, chopped fresh herbs (parsley, basil, tarragon), lemon juice, garlic, and black pepper in a food processor until smooth.
Crumble over salads, tacos, scrambled eggs, quesadillas, toast, and nachos.
FETA-VEGGIE SALAD
Toss feta chunks with chopped cucumber; snap peas; chopped celery; sliced radishes; chopped fresh basil, mint, and parsley; olive oil; vinegar; salt; and black pepper.
BAKED FETA GNOCCHI
Bake an 8-oz. block with 2 cloves chopped garlic, 2 pints cherry tomatoes, and a generous drizzle of olive oil at 400°F for 35 minutes. Stir until creamy, thinning with gnocchi cooking water as needed. Serve feta sauce over cooked gnocchi.
