Gear up. There are all kinds of ice pop molds out there, but my all-time favorite is the Norpro Ice Pop Maker because of its classic shape and easy-on, easy-off plastic cover. Some molds have lids with built-in sticks; others just have slots for sticks. Either way, if you want to make a second batch before you’ve eaten the first, you’re going to need sticks. I buy them by the boxful at the crafts store. Just be sure you get ones made of uncoated wood, so you’re not eating wood glue or dye or anything like that. Cool before freezing. Here’s how to gauge how hot your campfire embers are: Hold your hand about 2 inches over the heat and count the seconds until your hand gets uncomfortably hot. If you get to four or five, the embers are about 350°F to 400°F, which suits most recipes (including these). If you get to eight, they’re around 300°F—too low. If you get only to three or less, they’re 450°F or higher—too hot. As your food cooks, rotate the food packets and rake more hot embers over to keep the temperature consistent.
