Lisa Gross, founder of League of Kitchens (LOK), believes food can be a great cross-cultural bridge. She recruits immigrant women, many age 50 or older, to lead cooking lessons and tours in their own neighborhoods. The service, currently limited to New York City and Los Angeles, has instructors from Mexico, Afghanistan, Argentina, Greece, Nepal, Iran, and other countries. A Lebanese guide in Brooklyn invites you to her home kitchen to learn to make mujaddara (lentil and rice porridge topped with sweet fried onions) and bake maamoul (semolina shortbread cookies stuffed with dates and nuts). In Manhattan, a Japanese immigrant teaches mottainai, or waste avoidance, while making kinpira gobo—burdock root simmered in soy sauce, mirin (rice wine), and dashi (fish broth).
