COCONUT & MANGO BREAKFAST BOWLS

1 cup white quinoa4 cups canned coconut milk2 tablespoons coconut sugar¼ teaspoon sea salt flakes¼ cup finely grated sugar-free and dairy-free dark chocolate(70%-85% cocoa)2 tablespoons macadamias, roasted, chopped coarsely2 tablespoons natural almonds, roasted, chopped coarsely2 small mangoes, sliced thinlyFresh mint leaves, optional, to serve
1. Combine quinoa, coconut milk, 1 cup water, coconut sugar and the salt in a medium saucepan over high heat; bring to a boil. Reduce heat to low; cook, covered, for 30 minutes or until the quinoa is tender.
2. Top quinoa mixture with chocolate, nuts, mangoes and mint, if using. Serve.
tips The quinoa mixture thickens as it cools, so add more coconut milk or water if you wish…
