CHICKPEA AND AVOCADO SALAD
INGREDIENTS
1 can Chickpeas, drained and rinsed1 Avocado, diced1 Small red onion, finely chopped1 cup Cherry tomatoes, halvedJuice of 1 limeSalt and pepper to tasteFresh cilantro (optional)
INSTRUCTIONS
1. In a large bowl, combine the chickpeas, avocado, red onion, and cherry tomatoes.
2. Drizzle with lime juice and season with salt and pepper.
3. Toss gently to combine. Garnish with cilantro if desired. Serve immediately.
